Consumer Health Division  |  Registered Food Service Manager

Each food establishment (fixed) is required to have an on-site Registered Food Service Manager. The Registered Food Service Manager class is offered at various locations throughout the state. A list of those locations may be obtained either by calling the Consumer Health Division at (214) 670-8083, on line at the Texas Department of State Health Services or visiting the office at 7901 Goforth Rd, between 8:00 am and 4:30 pm.

Registered Food Service Manager Certification
City ordinance requires that a manager/supervisor, who has completed a food service manager certification course from a Texas Department of State Health Services accredited institution, be on-site while the establishment is operating. Operators without certified personnel on duty during operations will be issued Municipal Court citations for this violation.

Ordinance requires that the manager/ supervisor register the card from the Texas Department of State Health Services with the City of Dallas Consumer Health Division by completing an application for registration and paying a fee of $60.00. Registered Food Service Manager Certificates are valid for a period of three years or until the state established expiration date.

Training in food protection management is necessary to insure public health and safety, to comply with state and local ordinances and to introduce managers and food service employees to current food safety practices. This program consists of 14 hours of classroom training.

Completion of the 14 hours of training and a score of 75% or higher on the final examination are necessary for certification. This course must comply with State requirements for accreditation.

Registered Food Service Manager Re-Certification
Managers/supervisors may take a 6-hour re-certification course six-months prior to the expiration of the certificate obtained by completing the 14-hour accredited course. This course must comply with state requirements for accreditation.

This program consists of six-hours of classroom training followed by a one hour final examination. Completion of the six-hours of training and a score of 75% or higher on the final examination are necessary for re-certification.

Ordinance requires that the manager/ supervisor register the re-certified card from the Texas Department of State Health Services with the department by completing an application for registration and paying a fee of $60.00. Registered Food Service Manager Certificates are valid for a period of three years from the state established expiration date.

Note: The department may refuse to issue or renew a food service manager registration or may revoke a food service manager registration if the applicant or holder has been convicted of interfering with the lawful inspection of a food products establishment or makes a false statement of material fact in the application for registration.
